The event was sponsored in part by the National Pork Producers Council, so the original crust recipe was made with chilled lard. I have adapted the crust recipe (below) to suit the anti-pig-product contingent, but I must tell you that the…

After a few promising visits a month ago to the Pecos Farmers Market, I have to say now that I have no clue what's going on with it. My last two Sunday jaunts to the market around 10 a.m. (it opens at 9 a.m.) were fruitless. And vegetable-less. And Everything-less. Seasonality is no longer an excuse. Either the market has collapsed under its own lack of organization, or purveyors have found other retail avenues to dispatch their goods. All I wanted was a radish. It isn't a market if growers…

Word on the street is that Amavi chef David Sellers will be stepping down as Amavi chef, and picking up stakes for an Eastern U.S. locale. Replacing him, reportedly, is Chef Megan Tucker, of Inn and Spa at Loretto Pastry Chef fame. Tucker served as Sous Chef at Amavi previously. No timeline is set for this switcheroo.

Chef Michael Easton at Louis Moskow's La Stazione restaurant (Formerly The Railyard Restaurant and Saloon) cooked up a porchetta last Saturday, and served it with braised kale and Tuscan white beans. Utilizing certain cuts and offal, he crafted a fine herb-infused sausage stuffing in the pig's cavity, which he then trussed. The whole hog was slow-roasted and then served throughout dinner service. I tried some, and I was impressed by the meat's…

This weekend, Louis Moskow's Railyard Restaurant & Saloon (530 S. Guadalupe St., 989-3300) is showing off its new stripes. Plans were set in motion some time ago by chef Michael Easton (recently of Moskow's other endeavor, 315 Restaurant & Wine Bar) and Moskow to
give the Railyard a little face lift. That moment has finally arrived. If all goes as planned (which it rarely does in this crazy, wonderful business, but godspeed,…
